We are having a dessert free week this week to counteract the overindulgence in Christmas chocolate!! This probably won't go down too well with my youngest but "them's the breaks"!

Sandwich filling options are: cheese, left-over meats from roasts, cold cuts, salad, vegemite or peanut butter. I sometimes have baked beans but the children don't like them for themselves.

The week that was
Well this week was a bit wonky as the children ended up out for dinner on Thursday night and my son was working on Friday night so the dinners got shifted back a day or so. Other than that came in on budget and no wastage! Leftovers got eaten for lunch and Friday night's leftovers are tonight's dinner at work for Stirling. The coming week will be a bit strange as it will only be the two of us for most of the week so there will be some creative leftover use as the meat portions I buy are for three. Where I can I divide into individual portions and freeze but some things (mince for example) that is just not possible. Will work on next week's menu tomorrow and post Sunday night. Hope you are managing to eat well and live well.

Next week's shopping
I have done the shop for next week's meals and spent $90 all up. That also included about $10 of toiletries and sundries. Let's see how the week goes!! Will finalise the week's menu tomorrow and post Monday. Hope you all enjoy your weekend.

The week in progress
Well so far we are sticking to our meal plan except for desserts - still finishing off the Christmas chocolates!! We got so many of them and the ones we took to other people's places to try and decrease our quantity all ended up coming home with us because they all had too many as well. Reminder to self for next Christmas - DO NOT GIVE CHOCOLATE. On Spaghetti night made enough sauce to freeze two more serves so that's some cooking time saved for the future.
Also sorry for the disarray of the main post of menu. On the compose page it all looked great but on the blog it all went wonky. Will try a different format next week - hopefully with more success!

I'm Back!!
Sorry for the disappearing act but I ran out of puff. My son though wants me back on track and to that end bought me a meal planner for Christmas!! It will help with shopping and budgeting so I am happy.
Here is our first week's menu for 2012:

This week in my Kitchen - 30/7 - 5/8
Busy week this week with my birthday celebrations (where did my diet go?). The kids spoiled me and I had a lovely time.
Saturday - Thai food at our local Thai restaurant for celebration dinner. Approx cost $50 (3 of us)
Sunday - lamb chops and veg with chocolate mud cake sandwich cookies
Lamb chop - - $11.00
zucchini, mashed potato, carrots, broccoli and beans
The chocolate biscuits were made by Claudia and the recipe is unbelievably complicated!!!
Monday - Pork chops and stirfry vegetables and mini mint slices
Pork chops - $5.80 for 2
bok choy, carrots, capsicum, beans, corn, zucchini, broccoli
soy sauce
I just had stir fry veg as I try to have at least one meat free night a week.
Tuesday - Fried rice and rest of mini mint slices
3 rashers bacon - approx $2
rice
peas,corn,capsicum,bok choy, broccoli, carrots, zucchini, beans
onion and garlic
soy sauce and chinese 5 spice powder (1/2 teaspoon)
Made enough to do lunches for next two days
Wednesday - honey soy chicken legs with noodles and veg, birthday cake

Thursday - roast chicken and veg and brownies

Friday - Lebanese lamb pizzas - birthday cake
Lamb mince - $5.75
onion and garlic
cinnamon (1/2 teaspoon)
chilli (1 teaspoon)
2 medium tomatoes , chopped
tortillas
Recipe
Saute the onion and garlic, brown the mince, add the chilli, cinnamon and tomatoes cook til all fluid gone. Pile onto tortillas and cook in oven til tortilla crispy ( not long). Serve with lemon wedges and yoghurt.
I only got one box of fruit and veg this week so that cost is only $9.

Other - $70 (incl $50 dinner out)

Total cost of the evening meal over the week - $117

Triple Choc Brownies
Ingredients:
200g dark choc, chopped
200 g unsalted butter,cubed
3/4 cup (155g) brown sugar
3 eggs, whisked
100g milk choc bits
100g white choc bits
3/4 cup (115g) plain flour
Method:
Pre-heat oven to 170 C, Line pan with baking paper.
Place the chocolate and butter in saucepan and melt over a medium heat. Stir regularly. Set aside to cool slightly.
Add the sugar and eggs to chocolate mixture and mix until combined. Stir in the choc bits and flour and mix well. Pour into the pan.
Bake for 25 minutes or until crumbs cling to a skewer. Set aside to cool completely.
These were also for a craft class on friday.
