- Pumpkin and Sweet potato soup
1/2 butternut pumpkin
3 medium carrots
2 medium sweet potatoes (i prefer the orange ones)
1 litre chicken stock
pinch of salt (i use sea salt)
generous grind of black pepper
Chop the vegetables into even pieces so they all cook at the same pace. combine with chicken stock and bring to the boil. cook for 20 mins then blend with a stick blender or in a blender. Add salt and pepper to taste.
Serve with toasted crusty roll and a dollop of plain yoghurt.
Lamb mince - 500 g
onion and garlic
cinnamon (1 teaspoon)
chilli flakes (1 teaspoon)
2 medium tomatoes , chopped
tortillas or wholemeal pita bread

Saute the onion and garlic, brown the mince, add the chilli, cinnamon and tomatoes cook til all fluid gone. Pile onto tortillas and cook in oven til tortilla crispy ( not long - about ten minutes on 200 deg celcius). Serve with lemon wedges and yoghurt.
- Lebanese/Middle Eastern Lamb Pizzas
Lamb mince - 500 g

- Curry chicken with Naan
Recipe -
4 chicken thigh fillets ($5) - chopped
1 400ml tin coconut cream
2 tablespoons plain yoghurt
1 medium onion - diced
1/2 teaspoon garam marsala
1/2 teaspoon chilli flakes
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1 teaspoon tumeric
1 teaspoon ground ginger
In vegetable oil saute the onion til soft. Add the spices and cook til aromatic. Add the chicken and brown. Add the yoghurt and coconut cream and simmer while the rice cooks.
Serve with rice and warmed naan
- Chilli/soy/honey chicken
Recipe -
2 chicken breasts ($6) - chopped
1 small onion - sliced
1 clove garlic - sliced
1 teaspoon sambal oelek
2 tablespoons soy sauce
1 tablespoon honey
150 g green beans - cut into 3cm pieces
Brown the chicken and saute the onion and garlic til soft. Add the sauces and beans and cook through.
Serve with rice noodles.
- Italian meatballs and spaghetti
Recipe -
500 g beef mince ($7)
1 medium onion - diced
1 clove garlic - diced
1 teaspoon sambal oelek
1/2 cup fine bread crumbs
1 egg
1 tin italian diced tomatoes
1 jar spaghetti sauce
grated cheddar cheese
grated parmesan cheese
Saute the onion and garlic til soft. Add to the mince, egg, breadcrumbs and chilli. Mix well and shape into golf ball sized balls. Drizzle some olive oil into the bottom of a baking dish and place meatballs into it. Cover with tin tomatoes and sauce and then cover with cheeses. Bake in a moderate oven for twenty minutes.
Serve with spaghetti.
