This week in our dining room

Have decided to make this a weekly post rather than nightly as I am just not keeping up with it all.

Saturday - Sausages and veg

Sausages ($4)

Sunday - chicken curry with Naan

Recipe -
4 chicken thigh fillets ($5) - chopped
1 400ml tin coconut cream
2 tablespoons plain yoghurt
1 medium onion - diced
1/2 teaspoon garam marsala
1/2 teaspoon chilli flakes
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1 teaspoon tumeric
1 teaspoon ground ginger

In vegetable oil saute the onion til soft. Add the spices and cook til aromatic. Add the chicken and brown. Add the yoghurt and coconut cream and simmer while the rice cooks.

Serve with rice and warmed naan

Monday - takeout night - pizza - 2 pizzas $15

Tuesday - Chilli/soy/honey chicken

Recipe -
2 chicken breasts ($6) - chopped
1 small onion - sliced
1 clove garlic - sliced
1 teaspoon sambal oelek
2 tablespoons soy sauce
1 tablespoon honey
150 g green beans -  cut into 3cm pieces

Brown the chicken and saute the onion and garlic til soft. Add the sauces and beans and cook through.

Serve with rice noodles.

1 serve left over for lunch

Wednesday - Italian meatballs and spaghetti

Recipe -
500 g beef mince ($7)
1 medium onion - diced
1 clove garlic - diced
1 teaspoon sambal oelek
1/2 cup fine bread crumbs
1 egg
1 tin italian diced tomatoes
1 jar spaghetti sauce
grated cheddar cheese
grated parmesan cheese

Saute the onion and garlic til soft. Add to the mince, egg, breadcrumbs and chilli.  Mix well and shape into golf ball sized balls. Drizzle some olive oil into the bottom of a baking dish and place meatballs into it. Cover with tin tomatoes and sauce and then cover with cheeses.  Bake in a moderate oven for twenty minutes.

Serve with spaghetti.

2 serves left over for lunches

Thursday - chicken schnitzel and chips and veg

Schnitzel - 4 pieces ($7)

Friday - spaghetti bolognese

Left over saved sauce.

Total cost - Protein : $29
                   Fruit and veg : $18
                   Other : approx $30
                   Take out : $15

Thursday - garlic roasted chicken and golden syrup dumplings

Better today so a more substantial dinner!!

Main course:
Garlic roasted chicken legs  (8)- $5.32
potatoes
sweet potato
snow peas
carrot
zucchini
broccoli
cauliflower
brussel sprouts

I cooked the potatoes and sweet potato underneath the chicken legs so they were infused with all the lovely chicken juices.

Dessert:
Golden syrup dumplings

Recipe -
1 cup self raising flour
tablespoon butter
1 egg
enough milk to make a sticky dough

Rub the butter into the flour until it resembles bread crumbs. Add the egg and milk and mix to a sticky dough.

1 cup water
dessertspoon butter
2 dessertspoons sugar
2 tablespoons golden syrup

Mix and bring to the boil. Add spoonfuls of mixture and then cover with a lid. Takes about 5 minutes to cook - they are ready when fluffy. Yummy served with cream.

Wednesday - sausage sizzle

I was ill today so tonight's dinner was a very simple sausage sizzle with bread and butter and sauce - tomato or bbq. No tricky recipe just plain wholesome food.  Dessert was yoghurt.

Tuesday - Spaghetti with bacon and peas.

Just the two of us for dinner tonight so decided to save the meat I had chosen for tonight's dinner and do it tomorrow. Easy pantry meal instead.

Main course:
Spaghetti
onion
garlic
bacon
peas
cream
parmesan

Dessert:
Yoghurt

Raining and cold so "stick to your insides " food was in order!

Monday - BBQ chicken sandwiches and chocolate

Scratch dinner tonight as we had a late lunch.

Main course:
BBQ chicken - $11.50
Bread and butter

Some left over for school lunches.

Dessert:
We finished off the chocolate from the weekend.

Sunday - Lamb kebabs rice and salad - smartie cookies

Quick dinner tonight as late back from umpiring driving.

Main course:
Lamb kebabs
rice
salad

Recipe:
Lamb mince  500g - $5.50
small onion
1 clove garlic
1 teaspoon morroccan seasoning
1 tablespoon coriander paste
1 teaspoon sambal oelek
1 egg
Bamboo skewers

saute the onion and garlic til transparent.  Mix all the ingredients together and shape into sausage shapes around a skewer (makes about 8) . Grill til brown.  Serve with coriander yoghurt.

Dessert:
Claudia made smartie cookies.

Claudia is turning into quite the little baker.  Haven't been able to convince her to tackle a main meal yet!

Saturday - Crispy chicken burritos and chocolate

This is a  family favourite.

Main course:
Crispy chicken burrito kit
2 chicken breasts - $6
Salad items
sour cream
guacamole
grated cheese

We don't use the sauce provided in the kit as we don't like the flavour so we use sour cream and guacamole (homemade).

Dessert:
Crunchy chocolate - special treat as this is the last weekend of the holidays.

Friday - Morroccan chicken and chocolate

Masterfoods morroccan seasoning is a godsend when you want a quick tasty meal. I sprinkle it on chicken legs and on the potatoes to roast.  Into the oven they go and 1 1/2 hours later you have a tasty feast.

Main course :
8 chicken legs - $4.62
Morroccan seasoning
olive oil
potatoes
carrots
beans
zucchini

3 legs left over for lunch on the weekend!

Dessert:
chocolate

It's cold and rainy so a soul boost of chocolate is on the cards.

HI all!  Sorry to have been away for so long.  We have been the house of "lurgy" with everyone ill so no time for blogging or much else.
